Thai Tofu Pizza Recipe
Last Friday Matt and I made a delicious Thai Tofu Pizza for dinner. I didn’t take a picture (trust me it was pretty) but I want to share the recipe because (1) it really was delicious and (2) this way I’ll be able to make it again. So here goes:
- Preheat over to 350F
- Make pizza dough. I used this recipe for the dough. It was OK. Any basic pizza dough recipe, or pre-baked crust would be fine though
- Make peanut sauce (adapted from visualrecipes.com). Combine in a blender and blend:
- 1/4 cup peanut butter (nuked for 30 sec or so to soften it up)
- 1/4 cup bottled stir fry sauce or hoisin sauce
- 1 1/2 teaspoons honey
- 1 teaspoon red wine vinegar
- 1 tablespoon minced ginger
- 3 cloves of garlic chopped
- 1 tablespoon sesame oil (sub: olive oil)
- 1 tablespoon soy sauce
- 1/2 teaspoon chili sauce
- 1 1/2 teaspoons fish sauce or oyster sauce
- 1 tablespoon water
- Slice one block of firm tofu into thin strips and place in a baking dish. Put about 1/3 cup of the peanut sauce into a bowl and mix with a 1/2 cup water. Pour the diluted sauce over the tofu and bake for about 20 minutes
- When the dough has risen (if you’re making fresh) kneed it a few times and then spread it out on a baking pan
- Top the pizza with:
- the rest of the peanut sauce
- the baked tofu
- 1 cup bean sprounts
- 4 chopped green onions
- 1 carrot, julliened
- 1 red pepper cut into strips
- 1 1/2 cups mozzarella cheese
- Bake in 350F oven for about 20 minutes (until the crust is cooked and the cheese is bubbly).
- Garnish with fresh chopped cliantro and/or chopped peanuts
